Mimi’s Mac and Cheese Casserole (known as “Mimi Mac”)



8 ounces cooked macaroni

1 pound extra sharp cheddar cheese, grated

1 can cream of mushroom soup

1/2 soup can milk

1 cup mayonaise

1 cup sliced or chopped mushrooms

1 small jar pimentos

1/8 teaspoon curry powder

1/8 teaspoon sugar (if desired)

Crumbled Ritz crakers (1 sleeve)

1 stick butter


1. Mix all ingredients together except ritz crackers and butter in large mixing bowl

2. Butter a casserole dish

3. Pour all ingredients into casserole dish

4. Melt remaining butter and mix with crumbled Ritz Crackers

5. Spread the Ritz/butter mixture evently on top of casserole

6. Bake uncovered at 350° for approximately 30 minutes, until it bubbles


Be sure to include the curry and the pimiento, they are important to this recipe!

If you like, you can substitute Greek yogurt for the mayonnaise
